Thaw the Brioche Bun as directed on the packet.

Pickle the cucumber in the white wine vinegar and sugar. Add pink peppercorns to taste.
Make the onion rings: dip the onion in the corn starch, tap off the excess and deep fry (or bake in an air fryer/oven).
Make a ball with the mince, place on a hot griddle and smash with a spatula. Flip over and repeat. Season to taste with freshly ground salt and pepper.
Open the Brioche Bun and assemble your sandwich: spread mustard mayonnaise on both halves of your sandwich. Top with the (drained!) cucumber, burger, cheddar and onion rings.
Serve immediately!
