Fan of the Caesar Salad? Then try this vegan Caesar Sandwich with chickpeas, avocado, lettuce and that non-negotiable Caesar dressing...but vegan. ;) We deliberately choose a multigrain fitness baguette with extra flavour and crunch, fibre and vitamins. Did you know that those grains are also a source of protein? Ideal for your vegan and veggie clients!

Defrost and bake the fitness baguette as indicated on the packet. Leave to cool on a wire rack.
Make the chickpea spread: crush the chickpeas with the avocado, red onion, dill, chervil, capers and the (vegan!) Caesar dressing.
Cut the baguette in two.
Spread the underside with the chickpea spread.
Top with the lettuce, cashew, some extra dill and a freshly ground salt and pepper. Top with the other half of the baguette.
Serve immediately!
