What’s even better than a classic flavour combination? One that's served on a delicious bread. This Focaccia Vitello Tonnato is a prime example. The traditional focaccia effortlessly takes the combination of veal, tuna, anchovies, capers and parmesan to the next level. There are also interesting ways to customise this recipe. We'll tell you more about this in the tips!
Defrost and bake the focaccia as indicated on the packet. Leave to cool on a wire rack.
Make the vitello tonnato sauce: mix the mayonnaise with the egg, tuna (with the olive oil!), half the capers, anchovies, garlic and lemon zest into a smooth sauce. Season with salt and pepper and store in the fridge for up to 24 hours.
Open the fully baked, pre-sliced focaccia.
Spread the vitello tonnato sauce on both halves. Top the bottom with the veal, rocket, remaining capers and parmesan flakes.
Season to taste with a freshly ground salt and pepper. Put the top slice on and serve alongside some capers and lemon wedges.
Serve immediately!
