We have a lot of vegan sandwiches for you to try, such as a vegan sandwich with chickpeas and avocado and one with melted cheese with kimchi, but this vegan sandwich is one of our favourites, thanks to the flavourful tandoori cauliflower and pea pesto with mint and coriander, both of which you can easily make in advance. The balanced fitness baguette is delicious all year round. Experiment to find out which season it really takes off in!

Defrost and bake the fitness baguette as indicated on the packet. Leave to cool on a wire rack.

Meanwhile, make the tandoori cauliflower: Put the tandoori paste in the blender with some olive oil and blend until smooth. Cut the cauliflower into florets and mix into the tandoori. Vacuum pack and store in the fridge overnight.

Next, make the pea pesto: mix the (thawed) peas with olive oil, coriander and mint until you get a smooth consistency.
Cut the baguette in two. Spread the underside with the pea pesto.
Top with the vegan cheese, tandoori cauliflower and a twist of the salt and pepper mill.
Grill briefly, until the cheese is melted. Garnish with chopped cashew and some extra coriander. Top with the other half of the baguette.
Serve immediately!
